BOONIE'S GUACAMOLE


What food do you think of first, when you think St. Patty's day? For Boonie, my big guy, it's  Guacamole--of course!  And here, only here, can you get his top-secret recipe and in his own words too...


Get an avocado...


then cut it in half...


I keep turning it around...


then...


crack it open!


Take the pit out.


The pit is a big seed in the avocado.


Then throw away the pit...


take the squishy part out...


put them on the cutting board...


grab a bowl and get a fork...


then squish it...


and squish it...


and squish it...


and squish it until it's all squished up.


Then add salt and pepper...just one shake.


Then add one spoonful of salsa.


Put the guac in a little bowl.


Spread it out.


Put a chip inside it.  That's it!

Well, folks, there you have it.  Easy, efficient, healthy and tasty.  What it's lacking for in Irishness it makes up for in greeness.

Pickle Popsicle


"The pickle," my knight often says, "is very healthy."  Now I have not sought out any research on the subject, but I'd be willing to bet that may be  a stretch.  Ok, ok, for the sake of my marriage, I will say "in moderation."  But, my knight, bless his heart, can eat three or four with one tuna sandwich.  Consequently we often have a large empty pickle jar full of pickle juice laying around on the kitchen counter.  Soda, who follows in his father's footsteps, loves pickles as well and takes the idea of "re-use" to a whole new level with the invention of his pickle popsicle.  Now a staple at our house....in the words of Soda, here's how it's done...


You take the pickles out...


You put the juice in the freezer.  Then when it's freezed, it's ready.  Eat it with a spoon.  

There it is folks...a savory popsicle!  cheap, resourceful, gluten-free, dairy-free, easy and pickle-lover friendly.

CAMPFIRE COOKERY: SMORES


Ah Joshua Tree.  My knight, who is a camping afficianado, took us all out to Joshua Tree National Park for an overnighter to celebrate Soda's birthday.  We stayed at White Tank--a boys paradise.  It has rocks... 


Big Rocks.  
White Tank is so named because of the beautiful jumbo boulders of white tank granite that surround the campsite.  White tank granite is made of three kinds of rock.  Which brings me serendipitously to the traditional American camping treat known as the s'more which are also a composite of three things: graham crackers, chocolate and...


Roasted MARSHMALLOWS!

To begin...


Grab a fire fork or iron hanger thats been untwisted and straightened out.  To clean it off from it's previous user's marshmallows just 


Stick in the fire.


Clean.  Now for marshmallows...


2 seems good.  It seems balanced...not too many, not too few...


And in over the fire.  Now there are two camps when it comes to cooking s'mores.  Those who like to let it hang over the flame for just a second before strategically...


catching it on fire and burning it.  Very nearly to a crisp.  But those roasters who are in this "catch-it-on-fire" camp enjoy the crisp outside, goey inside, note of char in their roasted marshmallow...not to mention sharing a pyro streak.  I do usually fall into this camp.  But for the sake of this post and all of you who may not care for char and marshmallow pyrotechnics... I will also demonstrate the other camp...


The "perfectly-golden-marshmallow" camp.  Those in this camp have...


patience...perseverance...self-will to overcome the temptation of catching it on fire.


Ah...perfection.  (if I were in this camp, of course)


I've got my set up ready...chocolate, graham crackers...


Sandwich marshmallows between bottom graham cracker and chocolate and top graham cracker and...


gently remove the firework.


Et Voila!

POMEGRANATE CRACKER STACKER


The Horseman, my middle guy, notified me that we would be adding a new category to the Good Food fairy blog site: The Boy's Recipes. I said, "Aye aye, Sir!"  So this is the first submission put forth by the youngest member of our bunch...


who occasionally likes to be called Soda.  (And yes, that is the horseman lying in the background. *No children were hurt in the course of the Buzz Lightyear stunts)  


Soda said that this culinary creation is called a pomegranate cracker stacker. In the grand tradition of the lunchable ham and cheese stacker. It's easy to make, says Soda.

 
"First, you put a pomegranate seed on a cracker," says Soda. 



"Then you put the cracker on top."


Well, you heard it here first folks!  A pomegranate cracker stacker.  Presented by Soda, a regular renaissance man.  When he's not out training as a star wars buzz lightyear, he's in the kitchen whipping up new recipes.  Enjoy!
